Mondo di Vinegre is a fine dining restaurant, located in the building of the Emigration Museum at the historic edifice of the Marine Station in Gdynia marina.

I executed a far-reaching consultation and audit to help this establishment to gain in areas of:

A superior guest experience

  • Exclusively designed ‘fine-dining cocktails‘ menu;
  • new procedures of serving guests;
  • updated wine selection;
  • brand new non-alcoholic and spirits menu, including quality coffee;
  • a series of training, workshops, tasting sessions, and classes about classic cocktails for the staff;
  • improved ergonomics and aesthetics of work behind the bar.

Reducing unnecessary expenses

  • by the procedures in the operations of the bar where a qualified bartender is no longer needed in terms to execute perfect beverages – there’re prepared successfully by waiters;
  • optimisation of beverage costs thanks to modern solutions such as technological processes;
